Get an insulin pump! You can then eat what you want, when you want regardless of how many carbs are in it. You just bolus for the amount of carbs you are eating. You can then drink sodas, eat cookies or ice cream, whatever - whenever.

Sure, I can add insulin, but that's not really the problem when it comes to insulin intolerance.

Theoretically I should be able to reduce my blood sugar levels to near normal levels as well as reducing my insulin levels with diet control.

High blood sugar levels as well as high insulin levels cause some serious organ damage.

In the meantime I'm having a grand old time eating lots and lots of nuts, meat of various kinds, greens, onions, garlic, various manifestations of the cabbage, and so forth. You just can't imagine how great a raw, unripe, hard green pear tastes after several months with no fruit at all!

All tastes are acquired.

Then there's sugar-free Jell-O ~ if I were President I'd give those guys the Presidential Medal of Honor!

Even with an insulin pump, you can't eat anything you want. Besides, there are different types of type 2. I take no medication nor do I require insulin. My body produces enough insulin, my cells have stopped using it efficiently. Diet, exercise and some amount of common sense keeps my blood sugar well within range. Pumping more insulin into me would accomplish little.
