Autoimmune diseases go after one type of cells. Ergo, they are always bilateral when those cells exist in organs that are bilateral - e.g., joints of arms/legs/hands/feet/ginfers/toes, eyes, ears, kidneys, lungs, etc.

Since there's only one liver, autoimmune disease of the liver is, necessarily, unilateral!

You are right. One of the ways doctors tell a patient has autoimmune (or rheumatoid) arthritis is by the fact that it affects the joints in a "mirroring" pattern.
