Yeah...I got a hankerin' to try cookin' some brisket once it gets a little warmer...can you do it on a slow gas grill? Wood chips on one side...meat on the other?

Oh, man, that was wonderful, too. We had char siu on rice and some pork sandwiches for the next couple days. Gotta say, none went to waste. Most went to waist.

Yep, put a dry rub on it and let it sit overnight then sear it over the hot side and move to indirect heat and keep "sopping" it with with a mix of lemon/lime juice/apple cider vin/olive oil & water to keep it moist. 8-10 hours SLOW COOK fat side down.
Then ship it here;)
