Yes I understand that Jesus is not your ordinary human. We are made of both flesh and spirit, constantly battling one another. Flesh is temporal, spirit is eternal. Is there another point?
Let me try. Jesus is one Person. He is the Son of God, the eternal Word of the Father. Therefore this Person exists from all eternity. But Jesus is also man. Jesus is the Word made flesh, something that happened in time, at a definite moment. Before the Incarnation, the Word existed, but Jesus did not. So Jesus, while being one Person, has two natures: the divine one, which exists from all eternity, and the human one, which has its starting point at the Incarnation. To call Jesus a “human being” is to limit his being to the created world. But this is contrary to what the Incarnation is all about: the perfect union of the divine and human natures in one Person. Since that Person has no beginning, his being has no beginning. To call Jesus a “human being” would be to disregard the hypostatic union of divine and human natures in one Person who exists from all eternity.

Gender isn’t sex.
Gender is a grammatical category, governing the behavior of nouns and pronouns.
Sex is a biological category. It applies to living things.
Your argument would lead to the preposterous conclusion that Jesus has two beings.
As if that had any meaning.
