This may not be relevant to the topic because, as a Catholic, I'm not sure what's for Passover and what isn't.

However I'll share this: I made latkes the other day --- simplest recipe in the world --- and fried them in Rougie duck fat which I got from Amazon.com. It's pricey but I didn't use a whole lot because i went for half-canola oil, half duck fat.

Don-o said they were the best latkes he's ever had.

It's the schmaltz.
