CHILI CHEESE EGG PUFF
10-12 eggs (12 if small)
1 can green chilies, diced (mild to med)
1 16 oz container cottage cheese
1 lb cheese, shredded (use whatever combo you like or just
Cheddar
1 12 oz pkg Jimmy Dean Sausage, cooked and drained
any flavor
1/2 cup flour (low carb)
1 tsp baking powder
1/2 tsp salt
1/2 cup butter, melted
Mix all ingredients well and pour into a greased 9x13 pan. Bake at
350* for 40 to 50 minutes until set. Let stand 10 minutes
before cutting.
This is very low carb especially depending on what flour you use.
Serve hot as a breakfast casserole or chill and cut into small
squares for appetizers.
