Not sure whether it's true, but I was told that the difference between an oversized casket and a regular one is that the regular casket is filled with more filler under the lining (straw?). Any freeper morticians that can confirm this?

Over size caskets are just that, over size. Most manufactures of caskets make them wider, longer and deeper to accommodate the larger citizens. The amount of "straw" that you make mention of has been replaced by a adjustable bedding quite similar to a portion of a army cot that enables the mortician to raise and lower the body to properly position in the casket whether oversize or regular.
And yes....I am a mortician and in fact owner of a rural funeral home.
