I don't think you could use jicama for potato salad.

I tried. I peeled and cubed the jicama and boiled it. And boiled it. And boiled it.

An hour and a half later I had brown peeled and cubed jicama pieces that were still too crunchy. They wouldn't mash either.

I may have done it wrong, but we now just eat them raw.

I checked out an old low carb cookbook from 1974 from my local library.

There is a recipe for "potato salad" using rutabagas.

I haven't tried it so I don't know how well it would work.
