Good luck, you'll need it. Amarillo is my hometown. I even worked at the Big Texan steak ranch in my youth. I've heard dozens of stories about those who attempted, succeeded, and failed at the steak challenge.
Sorry I can't offer any strategic tips, but one thing you may want to know before you try. From what I have heard, you may be 'plugged up' for a week afterward.
