I might suggest that some of the flavor that is "lost" might be a byproduct of the bacterial decomposition that doesn't occur in irradiated meat.

I have a friend who loathes cheese, claiming that it tastes like spoiled milk.

To which I reply, "My dear, that is because cheese is spoiled milk".

We tested it. In formulated products like sausage and hot dogs it does effect the flavor. At least that is what our billion dollar engineering and product development folk indicated to me. That was the first thing I asked before I started buying stocks in irradiation firms. And since I had an inside scoop, I checked it out.

It may not change the flavor in raw meat, but the list of "stuff" that goes into sausages is enormous and a lot of it is stuff that light will knock down. ie.....spices and their VOC's. .
