Technically, I would suggest a robust white, similar to what would be served with pork for serving one's fellow man. And I darn sure wouldn't serve it any kind of rare. Minimum 165F internal temp. But unless you had a feed lot to get plenty of intersistial marbling, the meat would be tough and coarse. You would have to cook it like osso bucco.

I've been up too long. And I'm going to fail my sauces test on Monday. 8>)
