If you are using such dynamic translations, you should either drop the quote marks or indicate the inserted words with brackets.

Novus Ordo Seclorum: A New Order of the Ages (Ordo is not in the same case as Coeptis, but we can assume that the order is the undertaking)

I should also point out that the text is inconsistent with the notion of "one nation from many people;" I believe the authors would've used patria or maybe gens for "nation," both of which are feminine, as are res publica and civitas, other possible candidates for our unum.
