"Together with other snacks, potato crisps constituted a third of the estimated intake in adults. In younger men, the proportion of acrylamide from potato and other snacks is estimated to over 40%. Also fried potatoes and French fries contribute relatively much to the intake of acrylamide compared to the amounts consumed of these foods. Bread, with the exception of potato cakes and crispbread, contains low amounts acrylamide.
For males a lifetime cancer risk of 0.5x10-3, or 5 cancer cases per 10,000 individuals, was estimated based on a daily dose from acrylamide of 0.36µg per kg bodyweight for lifetime. For females, lifetime cancer risk was estimated to 0.4x10-3(4 cancer cases per 10,000) from a daily intake of 0.33µg per kg bodyweight. For the 2.5% males with the highest intake, lifetime cancer risk was estimated to 1.7x10-3 (17 cases per 10,000).
The "wellies" will have a higher level of acrylamide than the less well done.
