That is the waste products .
Pigs are raised for their protein
Steers are raised on corn and grains
You gonna tell me steers are raised for their fat
In addition deer have a very low fat% in their meat and all they eat are grains grass etc. What fat do they consume

Once you've cut out all the tastiest parts, it all goes to the rendering plant.....there the more fat the better.
But now I do see your point, sort of. The tastiest parts are what the farmer strives for, so in that sense, the animal is not "raised" for lard or beef fat.
