BTW, does anyone have a recipe for some fantastic Jewish food made from beets and oranges? I'll trade it for one for corn cob jelly or apple pie, or even Tater Tot casserole -- I'll leave out the cheese so it will be Kosher.
Beets in Orange Sauce
(a nice sweet alternative to Tsimmes, very pretty on a table)
- 3 cans of beets, peeled and sliced
- 1/3 c. sugar
- 1 tbs cornstarch
- ½ tsp salt
- ¼ c. beet juice
- ½ c. orange juice
- 1 tsp grated orange rind
- 1 tsp margarine
1) Combine sugar, corstarch and salt in a sauce pan with the beet juice, cook over medium heat stirring constanly until its thick.
2) Add the OJ, orange rind, margarine and beets mixing untill well coated.
3) Heat thoroughly and serve
