I invented a really kewl sandwich once. I even wrote a newspaper article about it and a local sandwich shop served it up based on my recipe. I called it an "Uncle Marty" sandwich in honor of my late Uncle Marty. It was a sandwich consisting of fried eggplant with bacon on top. Melted mozzarella cheese welded the bacon to the eggplant and covering all that was tomato sauce. It was served in an Italian roll. Try it sometime. It's TERRIFIC!!!

If you have a taste for authentic Hungarian food, you might enjoy a brunch dish that my grandfather really loved. The English translation , of the name , is " dirty noodles." Boil up some large, flat egg noodles ( yes, my grandmother made these ) , drain, place on a large plate and slather with lekvar ( prune butter ) , cinnamon , and add lots of broken up walnuts.
The fried eggplant sandwich sounds alot like a dish served at the White Pillars restuarant in Biloxi called "Eggplant Josephine".
