The Gurungs are a buddhist group, not moslem. They are the ethnic group from which the famed British Ghurka regiments are drawn. They are crazy about knives and would rather fight by sneaking up with a knife than by drawing a gun. They are fantastically loyal and courageous, but also rather simple and naive. So it is believable when the man says he was carrying all these knives for self protection. Maybe the best resolution is to hire the man as a sky marshall.
