Tofu-Pumpkin Pie
Especially for all of our Berkeley friends

• 1 block of tofu
• 1 can of pumpkin
• 2-3 egg whites
• 1 cup rice milk or apple juice
• 1 cup of natural sweetener (honey or brown sugar)
• Cinnamon and/or pumpkin spice
• 1 whole wheat or graham cracker pie crust

Mix all ingredients in a blender, pour into crust and bake at 385 for one hour.
Options: add peanut butter, chocolate chips, or blue Peacock! LOLOLOL
