Pumpkin Apple Streusel Muffins
- 2 1/2 cups all-purpose flour
- 2 cups sugar
- 1 tablespoon pumpkin pie spice
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs, lightly beaten
- 1 cup pumpkin
- 1/2 cup vegetable oil
- 2 cups finely chopped peeled apples
Streusel:
- 2 tablespoons all-purpose flour
- 1/4 cup sugar
- 1/2 teaspoon ground cinnamon
- 4 teaspoons butter or margarine, softened
In a large bowl, combine first five ingredients; set aside. In another bowl, combine eggs, pumpkin and oil. Stir pumpkin mixture into dry ingredients just until moistened. Stir in apples. Spoon batter into greased muffin tins, filling 3/4 full. Combine streusel ingredients and sprinkle over batter. Bake at 400° for 20-22 minutes or until toothpick comes out clean.Yield: 2 dozen. (I make 6 "Texas size" muffins instead of the small ones. Yummmmmmmmmmmmmmm)
