Pumpkin Apple Streusel Muffins  

• 2 1/2 cups all-purpose flour
• 2 cups sugar
• 1 tablespoon pumpkin pie spice
• 2 teaspoons cinnamon
• 1 teaspoon nutmeg
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 2 eggs, lightly beaten
• 1 cup pumpkin
• 1/2 cup vegetable oil
• 2 cups finely chopped peeled apples

Streusel:

• 2 tablespoons all-purpose flour
• 1/4 cup sugar
• 1/2 teaspoon ground cinnamon
• 4 teaspoons butter or margarine, softened

In a large bowl, combine first five ingredients; set aside. In another bowl, combine eggs, pumpkin and oil. Stir pumpkin mixture into dry ingredients just until moistened. Stir in apples. Spoon batter into greased muffin tins, filling 3/4 full. Combine streusel ingredients and sprinkle over batter. Bake at 400° for 20-22 minutes or until toothpick comes out clean.

Yield: 2 dozen. (I make 6 "Texas size" muffins instead of the small ones. Yummmmmmmmmmmmmmm)
