City Chicken, (which is actually not chicken:).

The only way I know how to make city chicken is to barbecue it. We almost always have ham on Christmas. After just getting rid of the last of the Thanksgiving bird, who wants to eat another one?

City Chicken: Cube round steak and pork chop (1 sq. inch cubes) Then take a short meat skewer (6 inches) and stab on a cube of steak then a cube of pork all up the skewer. Salt and pepper, roll in beaten eggs then finely ground cracker crumbs, fry slowly till cooked.

I don't know if it got it's name because it's fried like chicken or when it's done they kinda resemble a chicken leg. What ever they do take alot of time when you are feeding 15 people, (my son eats about 8 by himself every year) but they are worth it.
