An egg symbolizes new life because in the worship of Eshtar they also symbolized the rabbit as a symbol of fertility. It gave them good luck to carry around a rabbits foot so they could get pregnant. Hence how we get an Easter bunny and eggs in the same story. They all represent fertility and the name of the fertility goddess is Easter (Eshtar). This is more than mere coincidence.
The image we have of "St Nick" is a much older, drewid image than the tale of St Nick the Greek.
