Being prepared is admirable but keeping the amounts of food listed here would be a problem in our climate on the Gulf coast. There would be weevils, roaches and ants in everything other than the canned food.

Not if stored properly. If you can the items properly, or seal them in 5-gallon plastic buckets, nothing can get in and it lasts a long time.

I'd store whatever wouldn't go to waste, like canned goods. It's remarkable what you can get in tins these days. I've also sealed flour in #16 cans, as well as pasta, and dehydrated potatoes.

If you know a Mormon they usually have access to canning facilities and they are usually very happy to help you out. The cans aren't expensive and you can put your dry goods in them.
