Doesn't it sound great?! How about having one of those monster desserts like they had at the White House last night? Did you see it on C-Span or Fox? My mouth was watering!

Texas Governor's Mansion Cowboy Cookies
3 cups flour, 1 Tbsp. baking powder, 1 Tbsp. baking soda, 1 Tbsp. ground cinnamon, 1 tsp. salt, 3 sticks butter (at room temp), 1 1/2 cups sugar, 1 1/2 cups brown sugar, 3 eggs, 1 Tbsp. vanilla, 3 cups chocolate chips, 3 cups old fashioned rooled oats, 2 cups sweetened flaked coconut, 2 cups chopped pecans
Oven - 350 degrees. Mix flour, baking powder,soda, cinnamon & salt in a bowl.
In a large bowl, beat the butter until smooth & creamy, about 1 minute. Gradually beat in sugars until combined, about 2 minutes. Add eggs one at a time, beating after each addition. Beat in vanilla. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut & pecans.
For eachcooke, drop 1/4 cup doug on ungreased baking sheets, spacing them 3 inches apart.
Bake until cookie edges are lightly browned, about 17 minutes, rotating baking sheets halfway thru baking time. Remove cookies to a wire rack to cool. Makes about 4 dozen large cookies.
I got this from an article entitled, "What Dubya Eats" - - If I have these cookies in the house, my adult children (who don't live home!)sneak into the house when I'm at work & steal them!
