Audrey and I made a big carrot cake yesterday lol. Only 2 layers, though. But the cream cheese icing was exceptional.....I just told Audrey what to put in it (she wanted to make it by herself) and it turned out to be the best cream cheese icing I’ve ever tasted. We put chopped pecans in the middle and on the top, along with a cluster of icing carrots.

My friends said it was the best carrot cake they’ve had. I accidentally added the whole large can of pineapple - I was after was a disaster! I did add a LOT of vanilla bean paste to the cream cheese frosting, until those flecks of beans were all over and pretty. That was my favorite part of it.
