Pralines, not sure I’ve had one. How do you make them?

I bought a big bag of cashews but kept eating them. So I tried making britle, it actually turned out! I’ve never made candy that worked before. But now I’m indulging in brittle, I hid it from myself in the basement.

Easy peasy mac and cheesey.

Throw in pot:

1 1/2 cups sugar
1 1/2 cups evaporated milk
Scooch of vanilla (I use lots)
1/2 cup melted butter

Simmer while stirring for about 12 minutes....let it slow boil. After 12 minutes or so, when it starts to thicken, throw in:

1 1/2 cups chopped pecans

Turn heat off and stir for about 6 minutes.

Spoon drop blobs on parchment paper. Let cool for an hour. They will set up to consistency of soft fudge.

This is what’s in Pralines ‘n Cream Ice Cream.

Was your cashew candy made like Peanut Brittle?
My Memere used to make it, and when the candy
cooled off, she would tap the edge of the cookie
sheet until the candy broke up into various sizes.
That was the fun part!
