Again to your pic of shakshuka. I go a bit heavy on eggs, planning on one egg & smaller amount of the tomato mixture. I serve it with brown rice & a green vegetable -usually broccoli or green beans

The tomato composition is versatile depending how you go with spices: Asian, Mexican, italian. Also some use tomato paste + diced canned tomatoes (or fresh) ; anything you find tomato based your comfortable with
