Jurors are being instructed to imagine whatever underlying felony they, individually, juror-by-juror, think Trump was trying to “hide” by means of an accounting entry. Shouldn't the jury be instructed that the defendant has the presumption of innocence on crimes not specifically proven in a court of law?

Not if its a Republican - Code Napoleon is in effect: guilty until proven innocent. No penalty too extreme.
The whole idea is to get rid of Trump before the election, one way or another, no matter the law or the cost to the nation.
