The following android app has over 10,000,000 downloads and there are dozens of others that do the same thing. Unless you are talking to your grandmother... you should always assume that your calls are being recorded. And it is pretty hard to say whether one of your family members or a government agency hasn't installed something on Grandma's phone or your own that isn't recording everything.
