Overloaded, possibly imbalanced center of gravity. Article says they strapped some of the meat in the passenger seat and the rest in the belly storage. It said they did not strap that down.
One guess would be that they pushed the meat against the forward bulkhead instead of the rear. When the pilot rotated the meat slid back throwing the nose up into a stall..
