I think it depends on the person.
I took a little folklore based test ... chew a sliver of potato until it starts to taste sweet. The time would tell how well you digest carbs ... i.e. earlier is better. Mine never changed flavor so I guess I’m not real good at carbs.
Being Japanese helped me, I guess.
I never understood that test, because for me the flavor never changed. People told me I was lying for some reason. Thank you for being the first other person I’ve heard about who is missing the same enzyme.
