"Induction cooking is the most energy efficient type, but gas is the most versatile."

And a gas stove will keep you from freezing to death when a sleet-storm downs miles of transmission lines. Even if the stove has electronic burner ignition you can light it with an old-fashioned match.

Some stoves’ ovens don’t run unless there’s electricity to start the gas burner; there’s no way to start it with a lighter.

Been there, done that.

The top burners, however, -can- be lit with a lighter.
