"Not that they need to have the phone physically to do stuff like that."

True. I never wanted a smart phone, but was forced to get one because my 3G phone was being interfered with by a network booster in the area. About 8 or 9 years ago, I ended up getting the cheapest iPhone that Verizon had. I chose an iPhone because I use Apple computers, so was familiar with the OS. I only use the phone for calls and the occasional text message (mostly Dr. appointment confirmations, and CVS Caremark scripts). I don't use it to buy anything online, have never used it for streaming, played games, or read books on it. Once a day I use the Safari app to get Bing Reward s mobile search points on it. I've never set up my bank account, credit card accounts, or email on the thing. I don't know how people can use a phone to do those things. The only app I ever downloaded on it is Verizon's Call Filter. I get more spam calls and texts on it than regular calls, and texts. Hopefully I'll die before it does, because I really don't want to have to buy another phone ever. After 30+ years, I got rid of Spectrum (Time Warner) cable, and phone back in May. I kept their internet, because there are no other options here that would give me the speed I want. I would never subscribe to their cable or home phone service again. And I sure as hell wouldn't subscribe to their mobile service.

My phone stays turned off (not that that matters either, they can track you , listen to you, even when it is 'off', as long as the battery is in it, and my current phone has non-removable battery), except when I am actively using it (which is, on average, once a month.)

Just because I'm paranoid doesn't mean they AREN'T out to get me.
