The spike protein was chosen initially because it’s distinctive with Covid and vaccine builders figured that they would have a good chance of success targeting it. Time to market was a factor influencing that decision too. It was a requirement of Operation Warp Speed.
There’s other C-19 proteins that aren’t mutating quickly like the spikes. 2nd generation vaccines target more than just the spike protein.

The nucleocapside on the virus gives superior immunity by producing N-protein antibodies. They are durable and endow lasting immunity. That's why a natural infection is superior to an injection that only induces production of the the S- protein antibodies. The Jab is only temporary requiring following jabs (boosters) which are pathogenic in and of themselves and have diminishing returns.
You have ~ 1 in 30 chance of injury with each successive jab. Eventually you will catch a hot lot then you are screwed.

There are no 2nd generation jabs in distribution. All the jabs target the Spike protein only and it has learned to avoid the antibodies. The only variation is in the amount of mRna used.
Pfizer and Moderna have several billion doses set to expire unused. Thats why they are pivoting to Paxlovid which is a high priced snake oil.
