Let the free market deal with the problem. People will figure out how to make money from growing and selling food locally and then regionally.

It takes a lot of infrastructure to switch crops, and more to sell and process them.

Years. Not weeks, years.

Well, that may take a couple of years to shake out...as usual.

Usually, people don’t do that planting until there is a shortage, and then it takes a while for the crops to be grown during the proper weather. Go ahead...eat next spring’s cucumbers.
