As a non-Catholic please explain the difference between denied communion and excommunicated. I believe the difference is like probation and being kicked completely out, but isn’t denying communion as close to being excommunicated as you can get?

Yes, she has. The Church has just not recognized it formally. One excommunicates oneself by ones actions.
