I worked at a plant where that was the case. The electricity was monitored continuously and the moment the power dropped out batteries kicked in as well as a generator that rapidly spun up while the batteries (with appropriate electronics) supported the line. The process took mere seconds and nothing happened to the ongoing production. If there’s the potential for a huge loss and the plant wasn’t protected, well...lesson learned. Hopefully.
