The horses COULD see. Watch the video again, and you will notice the shields over horsey’s eyes are not opaque, but transparent albeit appearing to be tinted a bit, at most. You can see the horsey’s eyes through the shield.
Those are tactical eye shields to protect the horse’s eyes from thrown objects. Horses have monocular vision with a 350 field of vision. They can see pretty much everything.
