The reason they test for that particle size is that it is apparently much harder to filter (capture) than smaller or larger particles. This does not mean that the mask can’t effectively filter smaller particles, just that the testing protocol calls for that size particulate matter test media.
It makes the citing of 100 vs. 95 irrelevant for something like the virus or just the spike protein, however.
