Then the new day begins after sunset according to the Torah. Sunday, the first day of the week and the first day to labor, starts on Saturday evening.

The bible says He calls the Light Day
And the darkness Night.

It appears in the bible that there was Light, then less light (Evening), then morning (Dawn- New Light)

The New Light would have to be called Day because He calls the Light,Day.

There is one Sabbath that was supposed to start when His Light faded to Night.
9th at even to 10th at even.

The reason why is found in the New Testament.
And it happens to be the 40th day the Messiah of Israel fasted.
And Israel was called to fast from evening to evening. Because it’s tradition that people,after working during the Light, that they would retire in the evening and eat.
And Israel was restricted of having that evening meal.
Full 24 hours. 3 or 4 Night watches and the next 12hour day.
To commemorate what the Messiah of Israel did for 40 days.

Day- Light
Evening- Fading of Day
Morning- Dawn, new Light.

Evening and morning in the bible seems to describe the
Period between the Light.
Called Night

Not Day.
That seems to be reserved for the Light, according to scripture.
