I’ll admit I’m not the sharpest knife in the drawer, but since when is “destructed” a verb? I always thought it was a adjective.

"Destructed" is neither a verb nor an adjective.

The past participle of the verb "to destroy" is "destroyed."

The only allowable form would be "self-destructed."
