I wonder if it is possible to bring legal action against the DOJ/FBI for an unlawful raid, confiscation and leaking of constitutionally protected information (ie: attorney/client communications), without them being able hide behind “It’s an ongoing investigation” or “not if the client was conspiring to commit illegal actions with said attorney” BS? ? ?

First, you’d have to find both a prosecutor and a judge that isn’t (justifiably) afraid of thugs in the FBI who are perfectly capable of, and perfectly willing to manufacture evidence against someone that stands against them.
