My employer is asking about my vaccine status.
EEOC has explicitly said that "employers are allowed to ask their employees about their vaccination status".
I'm caught off guard and don't know what to do or if I even have a choice.

Well first you shouldn’t have been off guard....it’s been well known it was coming to this. Just as there are many ways you can answer the question by looking on line.

Is it coming from your HR department or is it coming from your manager and is the request in writing

Is it mandated by your employer? If it is, I would look into getting an exemption (medical or religious).

My simple reading of HIPPA says that anyone can ask, but they cannot force you to answer or discriminate against you if you refuse.
Medical discrimination is also covered by the ADA.
...but what do I know; I’m just a simple American.
