Lactose intolerance does not come from cheese. The fermenting of milk to cheese turns lactose into lactic acid. Milk, which contains lactose, will give you poops whereas cheese, which contains lactic acid, will give you constipation.

When I was a kid, my family ran a creamery with a store front. One regular customer, an older gentleman, insisted that he only get milk from a Brown Cow. I could not take a bottle from the display case in the store front because, obviously, that milk did not come from a brown cow. I had to go to one of the coolers in the back to get a bottle from the special "Brown Cow" cases that we stored back there. Worked every time.

The article says older adults become lactose intolerant. Without citation they claim 65 to 70 percent of older adults are lactose intolerant.

Still doesn’t answer my question. Where do they come up with these numbers???
