Psalms 118:8 - It is better to trust in the LORD than to put confidence in man.

Jeremiah 17:5 - Thus saith the LORD; Cursed be the man that trusteth in man, and maketh flesh his arm, and whose heart departeth from the LORD.

Psalms 118:9 - It is better to trust in the LORD than to put confidence in princes.

Psalms 118:8-9 - It is better to trust in the LORD than to put confidence in man.

I think "man" in those verses is used in the same sense as "princes". When applied to science (if that's a fair interpretation) it would mean we should never believe in science as "truth", because science is not truth in any sense, only theory

I would look at this verse: Great are the works of the Lord; They are studied by all who delight in them

God wants us to study His creation. Such study includes all of our scientific theories. We should never pretend we understand any more than the level of crude theories that always change, sooner or later.
