Let me tell you why I have Amazon Alexa devices in my home. It's quite simple really. I'm an empty nester. In the event I fall and cannot get up, I'll be damn'ed if I press a "Life Alert" button.

I have my Alexa devices setup to connect directly to 9-11 and send my address so help comes. I have a routine setup that when my Alexa's dial 9-11 the smart lock on my front door unlocks for the Emergency Responders so they don't have to break my front door down to get me. (That's something Life Alert cannot do!)

If Alexa is eavesdropping on me (and I've no doubt it is) it either hears complete silence occasionally broken by my heavy fingers on my mechanical keyboard, or it hears the music I'm playing and is somehow finding that valuable information to collect.

There's not a lot of middle-ground here for Alexa to snoop on me and collect data. I'm well versed in what Alexa collects and how it does it thanks to the packet sniffing I've done on my home network and I'm willing to take the "risk" of it eavesdropping on me. In my use case as an emergency 9-11 service for when I do not have my cellphone on me to dial it, I actually WANT it to eavesdrop on me.
