Your following of the data is much more detailed and complete than any of us. I guess this could come from correction of prior errors. Pure speculation but it could possibly also come from recategorizing some of the vaccination counts for people who previously fell in the under 65 group but now are 65 or older.

They have done this a few times before. It is typically a minor adjustment - 1-3 days worth of change. In this case, it is about one days worth.
