The only possibility is that they immediately reacted to the vaccine.
You say 2-14 days to show up. After 3 days two were dead. Perhaps it was a particularly virulent strain and plus-how old were these two nuns? Not trying to be argumentative-just postulating.
FWIW, I had the couf last August and at age 62 it wasn’t very much fun. Nearly 4 weeks of flu systems plus other stuff that lingered on for a couple more months...
But if anyone comes near me with a needle they may well get something they don’t want from me!
