South Korea is taking its kimchi war with China to the next level, enlisting a slew of foreign diplomats in Seoul to attest to the fact that the Koreans’ national dish is, in fact, Korean.
The feud has its roots in what many South Koreans say has been a concerted campaign of culinary appropriation by their larger and more powerful neighbor concerning the pungent dish of pickled cabbage.

Ha. A war sparked by kimchi?
I just finished off a two-quart jar of cabbage, carrot, and habanero kimchi. Gonna start another later this week. I am addicted to the stuff.
Nothing like talking close up with someone who just had a big bowl of winter kimchi!

Yeah, if it’s not nailed down the Chicoms will steal it. Although, I suppose they do steal a lot of nailed down stuff too.
What do you use for your spice mix? I cheat and use the NOH mix from Hawaii and just use napa cabbage.
I like adding a little smoked sesame oil.
I just get a jar of the stuff at my local grocers, but it is yummy. Make some good rice, marinate and broil chicken thighs or salmon. Really good. Put the drippings on the rice...…
I make my own. Basically just minced habanero (1 per quart seeds and all), minced garlic, brown sugar, and soy, and the salt that gets rubbed into the cabbage and carrots. Grated ginger when I have it.
I also buy the stuff sold in my local market. Of course it’s much cheaper if you’re willing to make it yourself. It’s delicious with grilled meats or at the bottom of a bowl of ramen noodles. And it does wonders for the digestive tract and immune system.
Commentators in China‘s state-controlled press have said the South Koreans’ fears are overblown, while subtly noting that nearly half of the store-bought kimchi in South Korea is imported from China.
