I had an elderly neighbor who would brine cucumbers in old butter churns, best pickles I’ve ever tasted. She also used the same churns to ferment cabbage to make kraut, best ever. God rest her soul.

She was right- brining in wood is the best. Dad always did his kraut in a wooden barrel.
