Sure, the Demos can put another person on the ticket as P or VP. BUT. The ballots are already printed, out there, and coming in. Heck, I voted today. Shucks. Looks like I wasted my vote for Joe and Kam (Kidding, folks, just kidding. Please put down the flamethrowers). To the point. They gotta elect Joe. Or maybe a write-in (right? Right). Technically, we're not voting for the candidate -- we're voting for a slate of Electors who will vote for the candidate when the Electoral College meets. The candidate's name is there only as a proxy for the Electors.
This means that Biden can drop out and be replaced by someone else, and any ballots cast in his name can still be counted for the slate of Democrat Electors. Those Electors will then vote for whomever they want within state Electoral College pledge requirements.

This means that Biden can drop out and be replaced by someone else Many states tie the electors to the actual names on the ballot. To vote for somebody else (even in the same party) would be a faithless elector.
